Jorge Vallejo's 2-Michelin-star flagship - ranked #3 on World's 50 Best (2025), a CDMX pinnacle. Quintonil is chef Jorge Vallejo and Alejandra Flores's Polanco flagship - 2 Michelin stars and currently ranked #3 on The World's 50 Best Restaurants (2025). Opened in 2012 on Newton Street as a casual menú-del-día spot, it evolved into one of the world's leading avant-garde Mexican restaurants. Named after quintonil (a Mexican amaranth herb), the 9+ course tasting menu emphasizes uncommon Mexican ingredients - huauzontles, chilacayote mole, escamoles, nopales, chicatana ants - with 98% of product sourced domestically (the only imports are caviar, one unspecified fish, and olive oil). Many vegetables come from the restaurant's own rooftop garden, literally 30 meters from plate. Seats 42 across two windowless dining rooms with volcanic stone floors and wood-clad walls. Bar counter offers a shorter menu including insect-based tacos. Reservations required - book via Tock well in advance. Quintonil holds a Michelin two-star rating in the 2026 Michelin Guide, one of only two restaurants in Mexico City to carry two stars. It has kept that rating since Michelin's inaugural Mexico City edition in 2024, alongside its long-running World's 50 Best ranking.
